Cant read name. would still work great, but few scale fish anymore, fillet is choice. A hundred years ago, it was almost a sin to waste the skin and all the oils in there, so they painstakingly removed every scale. Ever scaled a fish? good times, they get everywhere, and you always, always miss a few. ever eaten a fish scale? good times again lol
